STEP to GIF: what carries over and what does not

GIF has a palette of at most 256 colours, and a shaded render of a curved surface uses far more, so smooth gradients show visible bands. Every frame is a full image, so the file grows with the frame count and the picture size: a short turn at a modest size is usually enough for a product page. STEP describes geometry rather than pixels, so it has no inherent resolution. The conversion renders it at whatever size you choose, and that choice is final: enlarging the GIF afterwards will not recover the sharpness. Set the output dimensions or DPI before converting, not after.
